彭吉星，男，1987年7月生人，于2015年6月获中国海洋大学药物化学专业博士学位，现任中国水产科学研究院黄海水产研究所助理研究员。主要从事水产品营养品质评价与功能产物等方面的研究，主持或参与课题10余项，包括国家重点研发计划子课题，国家自然科学青年基金，山东省自然科学青年基金，农业行业标准项目等。发表SCI论文20余篇，其中第一或共一作者8篇。获发明专利5项，软件著作权2项，参与制修订国家及农业行业标准5项，1篇信息建议获全国政协每日社情采用。

主要研究内容、研究方向
主要围绕水产品营养品质评价与功能产物开展以下研究：① 水产品营养组分检测与评价标准；②水产品特征功能成分挖掘与构效关系；③水产品品质形成（保持）机理与调控技术。研究团队已构建了氨基酸、维生素、核苷酸及有机酸等水溶性营养物质的高通量精准液质分析方法，系统开展牡蛎、扇贝和鲍等重点养殖贝类的营养品质评价；建立基于高分辨质谱的非靶向/靶向代谢组学技术平台，开展了不同产地、品种以及环境胁迫对水产品的营养品质影响机制研究。
